Fast Pasta Salad!

Meh, I worked all day. Honestly, I worked part of the day and then did jack- all on the phone for the other half. I only had two sitting for dinner tonight, and whatever I made had to be fast.

Oh, how I love the pasta salad. You can almost never screw this kind of recipe up... throw stuff in a bowl with fresh cooked pasta and dinner has been CONQUERED! Sure there are a million variants of this running around on the internet, I just felt like we all needed one more.

This is what I threw in the bowl tonight!


Fast Pasta Salad:

1/2 cup (or more) salad dressing- I'm partial to Newman's Own Parmesan and Roasted Garlic
1 can sliced black olives
1 jar sliced mushrooms (not marinated here, but you can)
1/2 cup diced cherry tomatoes
A few tablespoons chopped Parsley
8oz cooked rotini pasta, al dente

1. Mix first 5 ingredients in a bowl.
2. Add in cooked pasta, mix well.
3. Eat.

To round this meal out, we had a nice spinach salad with some tomato vinaigrette and some crusty french bread.

After dinner entertainment was sponsored by my bassett hound, Tater... with some peanut butter smeared on the tip of her nose. There isn't much on the telly for Monday nights.
